Moist Vanilla Cake with Cardamom Frosting

Perfect for an Easter dessert, this versatile white cake is free of 7 of the top 8 allergens (try substituting an all-purpose gluten or wheat free flour)! Dress it up for the holidays or birthdays by using safe candies or colored frosting and omit or substitute the cardamom spice if it isn’t to your taste.


Moist Vanilla Cake

Milk-free, Egg-free, Peanut-free, Soy-free, Tree Nut-free

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups water
  • 1/2 cup oil
  • 1 T. lemon juice
  • 1 tsp. vanilla extract

Preheat oven to 350 degrees. Grease 13×9-inch pan. Set aside. In large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In small bowl, combine water, oil, lemon juice, and vanilla extract. Pour wet ingredients into the dry ingredients and stir just until blended, and large lumps are broken up. Batter will be slightly lumpy. Pour into prepared pan. Bake 15 minutes or until top springs back when lightly pressed. Cool completely and frost with Cardamom Frosting.

Cardamom Frosting

  • 1 cup shortening
  • 2 tsp. vanilla extract
  • 3 cups confectioners sugar
  • 4 T. water
  • 1/4 tsp. cardamom

In large bowl, with an electric mixer on medium speed, beat together shortening and vanilla extract for 30 seconds. Gradually beat in confectioners sugar. Beat in water and cardamom until spreading consistency is achieved.

  1. Can you make this with just using almond flour. Honeyville brand and do you need to add more ingredients to the mix. Also I live at high altitude do I need to adjust my baking time. My first go around didn’t work out. Any help would be appreciated.

  2. Made this with coconut oil and Mama’s Coconut Blend flour, in Denver, and it turned out great! Whole family loves it! I did have to bake it longer than 15 minutes, I think about 25 minutes total before it sprang back. Thank you for a great, safe recipe. We simply omitted the gluten and cardamom to further accommodate our allergies.
